Black Eyed Peas with Bacon and Pork

Ingredients
- 1 lb black eyed peas
- 2 tablespoons vegetable oil
- 6 oz pork shoulder, diced into 1/2 inch cubes
- 4 strips thick sliced bacon cut into 1/2 inch pieces
- 1 medium onion, diced
- 4 cloves of garlic minced
- 1/2 teaspoon salt if desired
- 1 teaspoon pepper
- 1/2 teaspoon cayenne
- 1 teaspoon garlic powder
- 4 cups chicken stock
- 2 cups water
- 3 bay leaves

Step 1
Heat oil in a large pot over medium high heat. Add pork and sear until brown on all sides, 4-5 minutes.
Add bacon, onion and garlic and cook until lightly browned, about 6-8 minutes.
Add salt, pepper, cayenne and garlic powder. Cook until mixture is coated, about 2 minutes.
Add the stock, water and bay leaves. Bring mixture to a boil and reduce heat to simmer, covered for 30 minutes.
Add black-eyed peas and continue to simmer for 2 hours until peas are very soft.
Smash some of the peas against the side for a creamier texture or puree 11/2 the mixture and return to pot.
