Curried Egg Salad Sandwich

Ingredients

  • 8 large eggs
  • 1/3 c mayo
  • 1 t curry powder
  • 1 T chopped chives
  • Salt
  • Pepper
  • Pumpernickel Bread
  • Lettuce
  • Chips

Preparation

Step 1

1. Place eggs in a saucepan & add enough water to cover.
2. Bring to a boil, cover, remove from heat, & let sit for 12 min.
3. Rinse, peel, & coarsely chop eggs.
4. In a bowl, combine mayo & curry.
5. Fold in eggs & chives; season w/ salt & pepper.
6. Serve on slices of pumpernickel w/ lettuce & chips.
