  • 2 Scallions, whites and greens finely chopped
  • 1/2 cup dry white wine
  • 2 tablespoons heavy cream
  • 1 large egg
  • 1 1/4 lbs chicken cutlets
  • 1/2 cup sliced almonds
  • 1/2 cup bread crumbs
  • 1/4 teaspoon nutmeg
  • salt and pepper
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons heavy cream
  • 1 stick cold butter cut into cubes

Step 1


1. Combine scallions, wine and 2 tablespoons cream in a sauce pan over medium heat and reduce to ¼ cup liquid. 5-6 minutes
2. beat egg and set chicken into it.
3. Combine almonds, breadcrumbs, nutmeg, salt and pepper in a food processor and grind to combine
4. Heat olive oil over medium high heat.
5. Coat chiken in egg then in crumb mixture.
6. Fry cutlets 3 minutes on each side until browned.
7. Whisk 2 tablespoons cream and butter into sauce until butter is incorporated.
8. Serve sauce over cutlets or on the side.
