Spicy Sausage and Bean Soup

Ingredients

  • 1 tsp olive oil
  • 1-1/2 lb bulk hot sausage
  • 1 small onion, chopped
  • 2 cloves of garlic, minced
  • 4 cans (15 1/2 oz) Great Northern Beans, undrained
  • 2 cans (14 1/2 oz) ready to use chicken broth
  • 1 can (14 1/2 oz) diced tomatoes, undrained
  • 1 tsp dried basil
  • 1/2 tsp black pepper
  • 1/4- 1/2 tsp cayenne pepper (to taste)
  • 1/2 tsp salt

Step 1


1. In a large soup pot heat oil over medium-high heat. Add onion, sausage and garlic; cook 5-6 minutes until sausage is no longer pink.
2. Add remaining ingredients and bring to a boil.
3. Reduce heat to medium-low and simmer, uncovered, for 30 minutes.
