Ingredients

  • 8

    large potatoes, peeled and cut into large wedges

  • 4

    cloves garlic, minced (more is better)

  • ½

    cup olive oil

  • 1

    cup water

  • 1

    tablespoon oregano (Mediterranean is best)

  • 1-1½

    1-1½ cup lemon juice

  • sea salt

  • coarse ground pepper

Directions

1. Preheat oven to 440F 2. spray pan with PAM and place ingredients into it 3. Season generously with salt and pepper 4. toss everything together 5. Bake 40 minutes 6. When a nice golden brown crust has formed on the potatoes, stir, season a bit more with salt, pepper and oregano 7. Add ½ cup more water if pan appears to be getting dry 8. Bake another 40 minutes
