Ingredients
- Enchiladas:
- 1 lb. ground chicken
- chopped onion or onion powder
- cumin
- sea salt
- 2 c. shredded cheddar or Mexican cheese
- 8 small tortillas
- Sauce:
- 1 can green chili sauce (mild or medium)
- 1/2 c. sour cream
- 2 Tbsp. lime juice
- chopped cilantro
- 1 c. crumbled quesa quotija

Preparation
Step 1
Brown ground chicken in skillet with onion, cumin and salt to taste. Drain grease. Fill tortillas with 2 large spoonfuls of chicken. Divide cheese evenly among each. Roll up and place seam side down in greased 9"x12" pan.
Prepare sauce in small skillet, warming all ingredients (do not boil, or sour cream will curdle). Pour over enchiladas. Cover with foil and bake at 350 degrees for 20 min. Uncover and sprinkle with crumbled quojita and bake 5 more minutes until slightly melted.
