Cheesy Bacon Oven Chips

Ingredients

  • 1 large russet potato
  • cooking spay
  • 3/4 cup shredded cheddar cheese
  • salt & pepper to taste
  • 2 tablespoons crumbled bacon (2 slices)
  • chopped chives (optional)

Preparation

Step 1

Preheat oven to 375 degrees. Bring sliced potatoes to a boil in cold, salted water to cover for 5 minutes. Carefully drain, and transfer slices to a paper-towel lined countertop or cutting board. Pat to dry.

Grease a baking sheet with cooking spray, and lay out potato slices so they are overlapping on it. Spray lightly with additional cooking spray, then sprinkle with salt & pepper to taste. Sprinkle evenly with shredded cheese & bacon. Bake 12-14 minutes in preheated oven until cheese is melted & bubbly. Serve with chipotle ranch sauce (recipe below). Serves 2.

Place all ingredients in a small bowl, and stir to combine. Refrigerate any leftovers.

Correct- cover the potatoes with cold, salted water. THEN bring to a boil. Hopefully that helps!

That thought puzzled me for a good five minutes too! I was wondering if you boiled them and THEN put them in cold, salted water. Glad it got corrected. :o)

Just made these and they are delicious!! I don't eat pork, so I skipped the bacon, but still great! And I had trouble finding some of the ingredients for the dip, so I used ranch, sour cream, crushed red pepper, emeril's essence, and texas pete. Was a great addition to the potatoes!!

About how long do you boil the potatoes for? Until they are soft on inside or less than that?

Hi Porscha! You will boil them only about 5 minutes. Not until they are soft, though, they will soften more in the oven.

For some reason I have to only boil like 3-4 minutes (depending on how strong the boil is)...mine seem to get too soft too quickly and break when I pour them in a colander to drain and then when I try to place them on a paper towel to drain. (plus they majorly stick together!

I had that problem to I boiled 5 min it was way too long they were throughly cooked and breaking apart. I still baked and they still tasted great just had to eat with a fork more like a scalloped potato dish. But I will make again and just take a few minutes off boiling. Delicious recipe!

Boiling time will differ with altitude.

Do you use powdered ranch mix, or the actual prepared dressing? It makes sense to me to use the mix, but I use it in a lot of different dishes so may be a little biased.

These look so delicious! I am planning to make it for a big group which means I'm going to quadruple everything lol. If I spread 4 batches of this over 2 baking sheets and put both in the oven side by side, would I have to adjust the baking time?

When you put them in the microwave do you add water? And do they need to be in a single layer.

just made these for my dinner. cut about 1/4" thick and boiled a couple of min. longer. after 12 min. in the oven, added a dollop of sour cream and cooked about 5 min. longer. covered with fresh chives from a pot I grow year-round - luckily I live in zone 9. I also fry up bacon and keep it in the freezer to use in recipes like this - just never could get used to even "real" bacon bits. thanks for the recipe which I found on Pinterest.

I made these tonight and they were delicious! The only problem I had was that the potatoes were so soft that they fell apart but I guess I boiled them long. Either way they were still yummy!!

Thank you for this recipe! I tested this tonight and ate all of it myself! Eek! This is one of my husband's favorite appetizers when we go out and it's nice to make it at home.

Did you add raw bacon bits or cooked the bacon first?

Hi! I wouldn't say you did anything wrong, mine actually weren't that crispy either... But if you wanted them to be, you could try leaving them in the oven an extra couple minutes. Just keep an eye on them to make sure the toppings don't start burning. (If you want them to stay in the oven even longer than that, I'd suggest laying out the potatoes on the sheet and spraying them but baking them bare for a little while first to give them a chance to crisp up - THEN add the toppings, & bake more until cheese is melted). Hope this helps!

Have made these a few times now. My Fiance requests them frequently. Tonight I am preparing them to take to a beer tasting party... As a twist on these I have added chopped green and red peppers. Just like having nacho's!! So delish!!!

I have made these several times and they are soooo good!! I have never boiled my potato slices, however. They are thin enough that they bake up just fine.

I am not sure how I feel about spraying the sliced boiled potatoes with more baking spray - it's a chemical, so why wouldn't you drizzle with a little olive oil???

Made these and did not really care for them. They were basically a baked potatoe with cheese and bacon. They were not crispy at all. I am going to try them again today but I am going to put the potatoes in the oven first so they can get crispy. Once crispy I will add the cheese and bacon.

I agree with the statement above. I tried my hand at these today. While they came out tender and the base flavors were there. The potatoes were not crispy at all and I even baked them for 7mins extra before admitting defeat. I also think that either the oven should be cranked up or that the potatoes should be prebaked before adding the toppings.

Very tasty! Thanks for the idea. We get these when we go out but I had never really thought to make them at home. We had some leftovers which we microwaved the next day and I thought they tasted even better then!

Im still a little confused about the cold boil water? I just started cooking so i wanted to pick a simple yummie snack :) sounds tasty

Also what can i replace with if i dont have cooking spray
