CHEESE****Blue Cheese Spread

28/06/14 - This was very good. I served it on top of grilled fillet and I can see how it would have other uses as well.

Ingredients
- 4 ounces light cream cheese, softened
- 2 ounces crumbled bleu cheese (I used PC Black Label Gorgonzola Piccante - you might need more if using a milder bleu)
- 1 clove minced garlic
- 1 small shallot, very finely minced
- grated zest of one half a lemon
- 1 - 2 teaspoon fresh thyme or lemon thyme
- salt and pepper to taste
Preparation
Step 1
Combine all ingredients, mixing well to incorporate cheese. Scrape into a glass jar and refrigerate. Can be used right from the fridge.
