Pan Roasted Halibut

Ingredients

  • 1 1/2 lbs halibut fillet, cut into 4 pcs
  • Kosher salt
  • Canola oil
  • Extra-virgin olive oil
  • Fine sea salt for finishing
  • Could add about 12 cherry tomatoes, halved

Preparation

Step 1

1. Remove fish from refrigerator & let stand for 15 minutes.

2. Position oven racks in the lower & upper thirds of oven & preheat oven to 350*F.

3. Check halibut to be sure all bones were removed. Season on both sides with salt. Add some canola oil to a large oven-safe frying pan & heat on high until oil shimmers. Add halibut to pan, presentation (nicer) side down, lower the heat to medium-high, & cook 4-5 minutes or until bottom of fish is golden. If using, add cherry tomatoes while this process is going on.

4. Lower heat to medium-low & cook 2 more minutes. Transfer the pan to the oven & cook for about 2 minutes, until just cooked through.

5. Remove pan from oven, turn fish over, & "kiss" the second side for about 30 seconds. Transfer to a platter (along with Butternut & Brussels Sprout Hash if making), & serve with a drizzle of olive oil & a sprinkling of sea salt.
