Shrimp Cakes

These patties will seem very loose even after cooling for an hour. If you carefully place them in the frying pan, they will stay together. They can be cooked a little ahead and reheated in the oven at 325 degrees.

Ingredients
- 1 pound medium shrimp, peeled and deveined
- 1 cup finely chopped red bell pepper
- 1 garlic clove, chopped (optional. I usually don’t add)
- 1/4 cup thinly sliced green onions
- 3 tablespoons mayonnaise
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1 large egg
- 3/4 cup panko,divided
- Oil for frying
Preparation
Step 1
1. Cut shrimp into small pieces, about 4-5 pieces per shrimp.
2. Heat a large skillet over medium heat. Coat pan with cooking spray. Add bell pepper to pan, saute 3 minutes. Add garlic, saute 1 minute. Remove from heat. Place bell pepper mixture in a large bowl. (I’ve skipped this step, as well.)
3. Add shrimp, green onions and next ingredients up to and including the egg, stirring well. Add 1/4 cup panko.
4. Divide mixture into 1/2 inch thick patties. Dredge both sides with remaining 1/2 cup panko. (Mixture will be very "mushy", but it will firm up when refrigerated.)
5. Chill at least 1 hour.
6. Heat pan over medium heat. Coat bottom of a frying pan with about a half inch of oil Cook patties 4 minutes on each side or until done. Place on a paper towel to drain.
7. Keep warm. Serve with cocktail sauce or salsa of your choice. It’s really good with Parmesan aioli.
