Ingredients
- 3 russet potatoes about 8 oucnes each, peeled, and cut lengthwise into 10 -12 evenly sized wedges
- 5 tablespoons vegetable or peanut oil
- salt and ground black peppep
Preparation
Step 1
Adjust oven rack to the lowest position; heat oven to 475 degrees.
Place potatoes in large bowl and cover with hot tap water; soak 10 minutes.
Coat 18 x 12 inch heavy duty rimmed baking sheet with 4 tablespoons oil and sprinke evenly with 3/4 teaspoon salt and 1/4 teaspoon pepper.
Drain potatoes and dry thoroughly.
Rinse and wipe out bowl and return potatoes to bowl and toss woith remaining 1 tablespoon oil.
Arrange potatoes in a single layer. cover tightly with foil and bake for 5 minutes. Remove foil and continue to bake until bottoms of potatoes are spotty golden brown (approx 15-20 minutes) rotating the sheet after 10 minutes. Turn and continue baking for 5 - 15 minutes longer until fries are to desired doneness.
Season with salt and pepper.
