  • 1 Coconut
  • 1 cup Water
  • 3 Tomatoes
  • 2 Onions
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 3 lbs Rabbit Meat

Step 1

Puncture and drain the coconut, setting aside the milk. Crack the coconut; remove the meat. Pare off the brown lining and cut the coconut meat into chunks.

Put the coconut meat, coconut milk, and water into a blender; blend until smooth. Heat to a boil in a large saucepan and simmer 15 minutes to thicken slightly. Transfer to the slow cooker.

Mince the tomatoes and onions. Add the tomatoes, onions, salt and pepper to the coconut.

Cut the rabbit meat into serving-sized pieces. Add to the coconut mixture. Cover and heat on low for 4 to 6 hours, basting often
