Salmon with Balsamic Glaze

Ingredients

  • 4 garlic cloves, minced
  • 1 tsp olive oil
  • 4 tsp Dijon mustard
  • 1/3 C balsamic vinegar
  • 1 T white wine or water
  • 1 T honey
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 6 slamon fillets, 4 oz each
  • 1 T minced fresh oregano or 1 tsp dried

Preparation

Step 1

- Line pan with no stick foil
- Saute garlic in oil until tender; stir in vinegar, mustard, wine, honey, salt, pepper; bring to a boil and simmer uncovered 3 - 5 min. until slightly thick; set aside 2 T for basting
- Place fillets in pan; brush with sauce and sprinkle oregano
- Bake at 425 for 15 - 18 min until flakes easily with fork; brush with reserved sauce before serving
