Jalapeno Popper Dip

Ingredients
- 16 oz cream cheese (2 blocks)
- 1 cup mayo
- 1 cup parmesan, shredded
- 4 cloves garlic,minced
- 4 ounce can of diced green chiles
- 4 ounce can of diced jalapenos
- 8 ounces of crumbled bacon
- 1/2 onion, diced fine
- 1 small can of corn or kernels from one ear of fresh corn
- Salt & pepper

Step 1
Cook your bacon and reserve a little grease. Saute your onion for 2-3 minutes. Add your corn kernels and crank heat to Med-hi to caramelize, about 5 minutes or until golden brown. Turn off heat and throw in your garlic and move it around a bit and move off hot burner so garlic doesn’t burn. Mix all of the other ingredients together and then add your onion mixture and about 2/3 of the crumbled bacon. Spread into a 8x8 baking dish and crumble reserved bacon on top. Bake for 20-25 minutes on 350 or until top is golden brown and bubbly.
