Ingredients

  • 16

    oz cream cheese (2 blocks)

  • 1

    cup mayo

  • 1

    cup parmesan, shredded

  • 4

    cloves garlic,minced

  • 4 ounce can of diced green chiles

  • 4 ounce can of diced jalapenos

  • 8

    ounces of crumbled bacon

  • 1/2

    onion, diced fine

  • 1

    small can of corn or kernels from one ear of fresh corn

  • Salt & pepper

Directions

Cook your bacon and reserve a little grease. Saute your onion for 2-3 minutes. Add your corn kernels and crank heat to Med-hi to caramelize, about 5 minutes or until golden brown. Turn off heat and throw in your garlic and move it around a bit and move off hot burner so garlic doesn’t burn. Mix all of the other ingredients together and then add your onion mixture and about 2/3 of the crumbled bacon. Spread into a 8x8 baking dish and crumble reserved bacon on top. Bake for 20-25 minutes on 350 or until top is golden brown and bubbly.
