Pat’s Broccoli and Chicken Stir-Fry

Ingredients
- 2 tablespoons soy sauce
- 1 tablespoon orange juice
- 1 tablespoon rice wine vinegar
- 1 tablespoon light brown sugar
- 1/2 tablespoon sesame oil
- 1/2 tablespoon red pepper flake
- 1/2 tablespoon corn starch
- 1 tablespoon peanut oil, more as needed
- 1 1/2 lb boneless chicken thighs, cut into 1/2 inch pieces
- 4 cloves garlic, minced
- 2 tablespoons peeled, chopped ginger
- 4 green onions, sliced
- 2 cups broccoli florets, blanched

Preparation
Step 1
1. In a small bowl whisk together first 7 ingredients
2. Blanch broccoli by placing in boiling water for 3 minutes and remove to ice water to stop cooking.
3. Heat oil in a pan over medium high heat. Add ½ of the chicken pieces. Stir fry until cooked through. Repeat with remaining chicken. Remove to plate.
4. Add enough oil to coat bottom of pan. Add garlic, ginger and onion and sauté about a minute.
5. Add chicken back to pan along with broccoli and heat through.
6. Pour in sauce and heat until thickened, about 45 seconds.
