Fried Egg and Avocado Sandwich

Ingredients

  • 2 Tbsp cream cheese, softened
  • 1 slice wheat bread, toasted
  • 1/2 tsp minced fresh parsley
  • 1/2 tsp minced green onion
  • 2 slices bacon
  • 1 large egg
  • 1/8 tsp salt
  • 1/8 tsp ground black pepper
  • 2 slices tomato
  • 1/2 avocado, peeled, pitted and sliced

Preparation

Step 1

Spread cream cheese over 1 piece of toast. Sprinkle with parsley and green onion.

In a small skillet, cook bacon over medium-high heat until crispy. Remove from pan and drain on paper towels. Drain grease from pan, reserving 1 Tbsp.

In same small skills, fry egg in reserved bacon grease over medium-low heat. Sprinkle with salt and pepper.

Place egg over cream cheese mixture. Top with tomato, and avocado.

Serve immediately.
