Aunt Vi's Rice Pudding

Ingredients

  • 1/2 gallon of milk
  • 1/4 tsp salt
  • 1/2 c rice
  • 1 c sugar
  • 2 eggs
  • 2 tsp vanilla

Preparation

Step 1

Bring milk, salt, rice and sugar to a boil; stirring constantly. Lower heat and simmer for 1 hr, stirring frequently. Beat 2 eggs. Stir half of mixture into eggs. Return to the pan. Cook for 5 minutes; stirring constantly.
Remove from heat. Cover top with waxed paper, allow to cool for 1/2 hr. Add vanilla. Pour into bowl and cover with wax paper.
