Ingredients

  • Butter for greasing the pans
  • 1 3/4 c all purpose flour
  • 2 c sugar
  • 3/4 c good cocoa powder
  • 2 tsps. baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 c buttermilk, shaken
  • 1/2 c vegetable oil
  • 2 extra large eggs, at room temperature
  • 1 tsp vanilla
  • 1 c freshly brewed coffee
  • Chocolate Buttercream Frosting

Preparation

Step 1

Preheat the oven to 350
Butter 2 8 inch round pans
Line with parchment paper then butter and flour the pans
Sift flour sugar, cocoa, baking soda, baking powder and salt in to bowl of electric mixer and mix at low speed until combined
In another bowl combine the butter milk, oil, eggs and vanilla
With the mixer on low speed, slowly add the wet ingredients to the dry
With the mixer still on low, add the coffee and stir just to combine, scraping the bottom of the bowl with a spatula
Pout the batter into the prepared pans and bake for 35-40 min
Cool in the pans for 30 m in then turn on to a cooling rack and cool completely
Frost with Chocolate Buttercream
