Ingredients
- 2 lg English cumcumbers diced small
- 2 plum tomatoes, diced small
- 1/2 c chopped cabbage
- 2-3 green onions
- 1/2 medium red bell pepper seeded and diced small
- 2-3 cloves garlic, minced
- 1/2 c fresh parsley, minced
- 1/4 fresh mint leaves, minced
- 1 T fresh lemon juice
- 1 1/2 sea salt
- 1 1/2 pepper
- 1/2 feta cheese
Preparation
Step 1
1. Combine first 8 ingredients.
2. whisk Olive oil, lemon juice, salt and pepper together in a small owl. Drizzle over veggies tossing lightly to coat. Stir in Feta Cheese. Refrigerate for 2 hours to allow flavors to blend
