Ingredients

  • 1/4 cup coconut flour
  • 1/4 tsp sea salt
  • 1/4 tsp baking soda
  • 3 large eggs
  • 1/4 cup honey
  • 1/4 cup palm shortening
  • 1 Tbsp lemon zest
  • 1 Tbsp poppyseeds

Preparation

Step 1

preheat oven to 350 degrees.

1. In a food processor, pulse together the coconut flour, salt and baking soda.
2. Pulse in eggs, honey, shortening, lemon zest and poppyseeds.
3. Spoon batter into muffin cups and bake for 15-20 minutes, or until a toothpick comes out clean.
4. Cool for an hour and serve.
