Ingredients

  • 1 1/2 lbs turkey cutlets, pounded 1/8” thick
  • salt and pepper
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 eggs beaten
  • 2 cup seasoned breadcrumbs
  • 1/3 cup olive oil
  • 5-cup baby arugula
  • 2 cup cherry tomatoes, halved
  • grated parmesan cheese
  • Lemon wedges

Preparation

Step 1


1. Pound turkey until 1/8” thin.
2. Combine flour, salt and pepper in shallow a bowl.
3. Beat eggs in a shallow bowl.
4. Place bread crumbs in a shallow bowl.
5. Season turkey on both sides with salt and pepper.
6. Dredge turkey lightly in flour and shake off excess.
7. Dip turkey into eggs
8. Dip turkey into bread crumbs to coat.
9. Heat oil in large skillet over medium heat
10. Fry, in batches, until golden brown. 2-3 minutes on each side
11. Remove from pan and drain on paper towels.
12. Arrange arugula on plate and top with tomatoes.
13. Drizzle with oilive oil and salt and pepper to taste.
14. Arrange turkey on top of tomatoes
15. Sprinkle turkey with parmesan cheese
16. Serve with lemon wedges on the side
