Ingredients

  • 1 cup Pearl barley
  • 1 medium Sweet potato, peeled and chopped
  • 1 large Red Pepper
  • 1 bunch Green onions
  • 1 piece (3inches) peeled fresh Ginger
  • 1 tbsp Curry powder
  • 2 cans (14.5oz each) no-salt added diced tomatoes, drained
  • 4 skinless cod fillets

Preparation

Step 1

In a large microwav-safe bowl, combine barley and 3 cups water. Cover with vented plastic wrap; microwave on High 10 minutes. Stir in sweet pototo. Cover with vented plastic wrap; microwave on High 15 minutes or until tender.

Meanwhile, chop pepper, slice green onions and grate ginger; reserve 2 tbsp onions for garnish. In a bowl, combine remaining green onions, red pepper, ginger and 1/4 each salt and pepper.

Heat skillet on medium high, coat with cooking spray. Add pepper mixture. Cook 3 minutes or until golden brown, stirring often. Add curry powder, cook 1 minute, stirring. Stir in tomatoes; heat to boiling. Nestle cod in tomato mixture, cover and cook 5 to 8 minutes or until cod turn opaque throughout.

Serve cod mixture over barley and sweet potoato. Garnish with green onions
