CHICKEN AND BROCCOLI AU GRATIN

Always a crowd pleaser. This is good served with rice, or bread for dipping in the cheese sauce.

Ingredients

  • 1 lb fresh broccoli cut into to spears
  • 2 whole chicken breasts
  • 1/4 cup (1/2 stick) butter
  • 1/4 cup of flour
  • 1/2 teaspoon salt
  • dash of pepper
  • 1/2 teaspoon dry mustard
  • 1 cup chicken broth
  • 1/2 cup light cream
  • 1 cup cheddar cheese
  • 2 teaspoons white wine
  • Parmesan cheese--grated

Preparation

Step 1

1. Steam broccoli (crisp tender)

2. Remove bones from chicken breast and cut into pieces.

3. Melt butter in a medium size sauce pan; blend in flour, salt, pepper and mustard. Stir in chicken broth and cream; cook over medium heat, stirring constantly, until sauce thickens and bubbles, 1 minute. Add cheese and stir until melted. Stir in wine and remove from heat.

3. Arrange broccoli spears in bottom of greased 8 or 9 inch baking dish. Overlap chicken slices on broccoli. Pour sauce over chicken. Sprinkle lightly with Parmesan cheese.

Bake in moderate oven (350) for 25 minutes or until heated through and top starts to brown.
