    Lamb Tenderloin

  • 2

    cup Honey (preferably local)

  • 2

    cups Apple Juice

  • 1

    tablespoon Corn Starch

  • To Taste:

  • Salt

  • Pepper

  • Thyme

  • Fennel

  • Rosemary

  • Dash of Cayenne

  • Cumin

  • Coriander

  • Dash of Chili Powder

Directions

Rub a small amount of the spices onto the tenderloin. Preheat the oven to 375. Place tenderloin in a roasting pan and bake for 80-100 minutes or until internal temperature reaches 145 degrees. In a large saucepan, mix the rest of the spices, the honey, and the apple juice. Over medium heat, stir until everything thickens. In the last 15 minutes in the oven, take the lamb out and pour the glaze on top. Let it finish the remaining time in the oven.
