  • 2 Tablespoons Olive Oil
  • 1 Onion, chopped
  • 1 rib celery, chopped
  • 2 carrots, chopped
  • 1 Tablespoon tomato paste
  • 2 (15.5 oz) cans white beans
  • 3 cups chicken broth
  • salt and pepper to taste
  • 1/4 cup pesto
  • 1 1/2 cups garlic croutons to top with

Preparation

Step 1

Warm oil in a large pot. Add onions, celery and carrots. Cook about 5 minutes. Stir in tomato paste and beans. Pour in broth and season with salt and pepper. Bring to boil, then reduce heat and simmer about 10 minutes, until vegetables are ten der. remove soup from heat and puree. Serve with croutons.
