Creamy Coconut Pie

Ingredients
- 6 Limes
- 3 C toasted coconut
- 1/4 C light brown sugar
- 1/2 C melted butter
- 1 C 14 oz sweetened condensed milk
- 1/4 C sour cream
- 1 pkg instant white chocolate pudding mix, like Jello
- 1 container 8 oz frozen whipped topping, like cool whip, thawed and divided

Step 1
Zest 1 lime, juice all 6. In bowl combine coconut, sugar and butter until blended. Press into 9" pie plate, freeze.
In bowl, stir together condensed milk, 1 C lime juice, 1 T lime zest and sour cream until blended. Whisk in white chocolate pudding mix for 1 minute. Let sit 5 minutes. Fold in 2 C whipped topping
Sp0on mixture into chilled crust.
Chill pie in refrigerator 2 hours'
Top with remaining whipped topping
