SNOWBALL COOKIES

  • 2 cups flour
  • 2 cups finely chopped pecans
  • 1/4 cup sugar
  • 1 cup butter, softened
  • 1 tsp vanilla
  • Icing sugar

Preparation

Step 1

Heat oven to 325F. In a large mixing bowl, combine flour, pecans, sugar, butter and vanilla. Beat at low speed, scraping bowl often, until well mixed, 3 to 4 minutes. Shape rounded teaspoonfuls of dough into 1" balls. Place 1" apart on un-greased cookie sheets. Bake for 18 to 25 minutes or until very lightly browned. Remove immediately. Roll in icing sugar while still warm and again when cool.
