Ingredients
- 5 fresh medium beets (about 1 1/4 pounds)
- 1 tablespoon cornstarch
- 1 tablespoon sugar
- 3/4 teaspoon salt
- dash of pepper
- 2/3 cups water
- 1/4 cup vinegar

Preparation
Step 1
* Prepare and cook beets, cut into slices or dice.
* Mix cornstarch, sugar, salt and pepper in saucepan.
* Stir water and vinegar gradually into cornstarch mixture.
* Cook, stirring constantly, until mixture thickens and boils.
* Boil and stir for 1 minute.
* Stir in beets, heat throughly.
Note: use Rice flour if you wish to freeze this recipe. (rice flour will not curdle when frozen)
