Ingredients
- 12 C mango coarsely chopped
- 2 large onions peeled & chopped
- 2 C raisins
- 1 C fresh ginger diced
- 2 1/2 C sugar
- 2 C brown sugar
- 3 C vinegar
- 1 1/2 t whole allspice
- 1 1/2 t whole cloves
- 2 (2" piece) cinnamon
- 2 t salt
- 1 t peppercorns
Preparation
Step 1
Sterlize jars & lids
Combine ingredients in pot
Boil, stirring occasionally
Simmer 2 1/2 hours until thick
Stir often
Seal & process
Add jalapenos or pepper flakes to taste
