Summer Vegetable Tian

A tian is a layered vegetable dish cooked in olive oil and baked au gratin. This is a colorful, healthy recipe that's easy to prepare.

Ingredients

  • 1 T olive oil
  • 1/4 small red onion
  • 2 cloves garlic
  • 1 large zucchini
  • 1 large yellow squash
  • 3 red potatoes
  • 3 Roma tomatoes
  • 1 tsp dried thyme
  • salt & pepper to taste
  • 1/2 cup shredded Italian cheese

Preparation

Step 1

Finely dice the onion and mince the garlic. Saute both in a skillet with olive oil until softened (about 5 minutes). While the onion and garlic are sauteing, thinly slice the rest of the vegetables.

Spray the inside of a baking dish (8x8 or 7x11) with non-stick spray. Spread the softened onion and garlic in the bottom of the dish. Place the thinly sliced vegetables in the baking dish an alternating pattern. Sprinkle with salt, pepper, and thyme.

Cover with foil and bake at 400 for 30 minutes. Remove foil, top with cheese and bake for another 15-20 minutes or until the cheese is golden brown.
