MUSTARD PICKLES MILLIONAIRE SAUCE 0 Picture

Ingredients

  • 6 cups vinegar
  • 8 cups white sugar
  • 1 cup flour
  • 1/3 cup dry mustard
  • 1 tsp Tumeric
  • 1 tsp celery seed
  • 1 tsp Mustard seed
  • 1 bag of pickling spice tie in cheese cloth (can use J-cloth)

Preparation

Step 1

Peel and cut cucumbers (approx. 5 big ones). Soak overnight covered with water and add handfull of pickling salt.

Peel pearl onions and soak overnight covered with water and add pickling salt - soak in separate container.

NEXT DAY:

Drain cucumbers and pearl onions separately.

Combine vinegar, sugar and bag of pickling spice and bring to boil. Before adding the cucumbers to the vinegar mixture, set aside at least a cup of the vinegar mixture in a liquid measuring cup.

Note: Mix the flour, dry mustard, tumeric in the 1 cup vinegar mixture with a whisk.

Cook separately - cauliflower, celery, yellow beans and drained.

Once the vinegar mixture comes to boil, add the cucumbers and cook till glassy looking. Once cucumbers are done add the pearl onions and cook till transparent looking. When the pearl onions are cooked, add the 1 red pepper cut in long strip. Sprinkle mustard seed and celery seed.

Add some of the vinegar mixture juice to the mix flour, dry mustard, etc. to make the mustard sauce and pour to the boiling mixture (cucumbers, pearl onions and red pepper). Add all the vegetables and stir, pour to the canning bottles and steam.
