Hot Mozzarella Rounds

Ingredients

  • 1 1/2 C. reserved Roasted Vegetable Ratatouille
  • 1/3 C. tomato sauce
  • 2 T. chopped fresh parsley
  • 1 1/2 t. red wine vinegar
  • 5 whole English muffins, split, toasted
  • 3 oz (3/4 cups) Mozzarella Cheese, shredded

Preparation

Step 1

Heat broiler. In 5 cup blender container place reserved vegetables, tomato sauce, parsley and vinegar. Cover; blend until vegetables are coarsely chopped (15 to 20 secs.)

Place muffins on baking sheet; top each with 2 T. vegie mixture and cheese. Broil 4 to 5" from heat until cheese is melted (3 to 4 mins)
