Black Bean Chili

Ingredients

  • 1 cup black beans
  • 4 cups water
  • 3 cups chicken broth
  • 2 cups stewed tomatoes
  • 2 T. olive oil
  • 1 onion, chopped
  • 1 red bell pepper, diced
  • 5-8 cloves garlic, chopped
  • 1 T. cumin
  • 2 t. chili powder
  • 1 t. dried oregano
  • 2 hot or mild Italian sausages, casing removed & crumbled
  • 1/4 cup salsa
  • 1/2 cup cilantro, chopped
  • 1/4 cup freshly grated cheddar cheese

Preparation

Step 1

Soak the beans in water overnight.

Add broth and stewed tomatoes to the beans and soaking liquid, simmer in a large pot with lid on until beans are almost tender – about 1.5 hours.

Heat olive oil in skillet and sauté onion, garlic, red bell pepper, spices and sausage until the onion is browned. Add to beans. Add salsa and simmer with lid on for another 45 minutes.

Boil over high heat without the lid to increase the thickness. Grate fresh cheddar over the top of each bowl and garnish with cilantro.

Serves 4 - generous
