Meat Stuffed Bell Peppers

Ingredients

  • 4 Bell Peppers
  • 1 Pound Hot Italian Sausage
  • 1 Red onion
  • 1 c. chicken broth
  • 1 c. cooked rice (cook rice in 1c. chicken broth)
  • 1 can Rotel Tomatoes
  • 1 can green chills
  • Pepper Jack Cheese

Step 1

1. Cut tops of bell peppers and clean out ribs and seeds. Cut small part of bottom if needed to make stand up alone. Cover them in a drizzle of olive oil and salt and roast in the oven at 400 degrees for about 20 minutes (until starting to brown)
2. While they're roasting, cook rice according to package directions in chicken broth. Set aside.
3. In a large skillet, cook onion in a little bit of olive oil until they are translucent. Add sausage and brown. Drain juices off of tomatoes and add to sausage. Add green chili and cook this until all of the extra liquid evaporates.
4. Mix the rice and sausage mixture all together in a large bowl. (Note: this makes a ton of filling. Freeze half for later or use in eggs in morning.)
5. Put filling in bell peppers and bake 400 degrees for 15 minutes.
6. Add cheese to top of bell peppers. Turn the broiler on and bake for 4-5 minutes, just until the cheese is melting and starts to brown.
