Ingredients
- Glaze:
- 1 3/4 cup cranberries, fresh or frozen
- 1 cup whole wheat flour
- 1 cup unbleached, all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 Tablespoon freshly grated orange zest
- 2 Tablespoons freshly squeezed orange juice
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1/4 cup unsalted butter, cut into pieces, room temperature
- 1/2 cup chopped walnuts
- 2 Tablespoons freshly squeezed orange juice
- 2 cups powdered sugar, sifted
- 1/4 cup reserved cranberries

Directions
1. Heat oven to 350°F.
2. Into Vitamix container add cranberries and fill with cold water to the 4 cup mark. Secure lid.
3. Select Variable 8 and pulse 2 to 3 times or until coarsely chopped. Strain cranberries through a fine mesh sieve. (Reserve ¼ cup of chopped cranberries for Glaze.)
4. Rinse and wipe out container.
5. In a large bowl combine flours, baking powder, baking soda and salt; set aside.
6. Into the Vitamix container add orange juice and zest, egg, vanilla, butter and sugars. Secure lid.
7. Turn machine on and slowly increase speed to Variable 8. Blend for 20 seconds.
8. Combine wet ingredients into dry and mix well using a stiff spatula or wooden spoon. Add walnuts and cranberries; incorporate completely.
9. Wash Vitamix container.
10. Portion dough onto parchment lined cookie sheets using a #40 scoop (1 ½ teaspoons) into 30 cookies.
11. Bake at 350°F for 10 to 12 minutes, until edges are lightly golden. Cool completely on a wire rack.
12. For the Glaze: Into a clean Vitamix container add orange juice and powdered sugar. Secure lid.
13. Turn machine on and slowly increase speed to Variable 6. Blend for 10 seconds. Stop machine, remove lid and scrape down sides of container.
14. Add cranberries. Secure lid and blend at Variable 6 for an additional 10 seconds.
15. Pour glaze into a bowl and set aside for garnishing.
16. Once cookies have cooled, dip half into Glaze and allow to dry on a wire rack.
