Spaghetti squash with black beans and cilantro

Ingredients

  • I squash cut in half
  • 1 c water
  • 1 small onion chopped fine
  • 1/2 red bell pepper diced
  • 2 garlic closed chopped
  • 1 15 oz can tomatoe sauce
  • 1 can black beans
  • 1 tb chili powder or taco seasoning
  • 1/2 tsp cumin
  • 3 tbs fresh chopped cilantro

Preparation

Step 1

Place squash cut side down on a glass baking dish and add water to dish. Microwave till tender. Approx 12 minutes.turn squash over and let cool slightly scrape out seeds.
Heat 2 tbs evoo in skillet,add onion,bell pepper ,garlic and cook till softened. Add tomatoe sauce, chili powder, cumin and beans bring to a boil and reduce heat and simmer for 5 minutes.
Scrape. Squash with fork to make "spaghetti" spoon bean mixture over and top with cilantro.
