Vanilla Rum Mousse

Ingredients

  • Mousse:
  • 1-3 ounce package vanilla pudding mix
  • 1 C whipping cream
  • 1/4 C sugar
  • 2 ounces dark rum
  • Raspberry Sauce:
  • 10 ounces frozen raspberries
  • 2 Tbl sugar
  • 2 Tbl raspberry, currant or strawberry jelly
  • 1 Tbl rum, optional

Preparation

Step 1

Raspberry Sauce:
Thaw berries and mash. Combine with sugar in saucepan. Stir in jelly over low heat. Add rum. Thin with water if too thick. Makes 1 cup.

Prepare pudding according to directions, but do not chill. Whip cream and sugar until stiff, fold cream and rum into pudding mixture.

Place 2 Tbl raspberry sauce in bottom of a 4-ounce wine glass. Pipe or spoon mousse on top so sauce travels halfway up glass. Top with more sauce. Garnish with whipped cream.
