Quick Crispy Potato Spears

Ingredients

  • 1 medium baking potato, scrubbed
  • 4 tsp finely crushed cornflakes (or saltine crackers)
  • 4 tsp grated parmesan cheese
  • 1/2 tsp paprika
  • 1 Tbsp prepared ranch salad dressing

Preparation

Step 1

MICROWAVE TO BROILER DIRECTIONS: Pierce potato with fork. Place on microwave safe roasting rack. Microwave on HIGH for 3 minutes; turn potato. Continue to microwave on HIGH for 2 to 5 minutes or until tender. Let stand to cool slightly. Meanwhile in small bowl combine cornflake (or saltine)crumbs, parmesan cheese and paprika. Cut potato in half lengthwise. Cut each half lengthwise, forming a total of 6 spears. Brush each spear with 1/2 tsp dressing. Sprinkle 1/6 of cornflake or saltine mixture over each spear. Broil 4 to 6 inches from heat 2 to 3 minutes or until lightly browned.
