Bisquick Thai Chicken With Spicy Peanut Sauce 1 Picture

Ingredients

  • Thai Chicken:
  • 3 tablespoons butter
  • 1 cup original Bisquick
  • 1 1/2 teaspoons curry powder
  • 1 1/2 teaspoons garlic powder
  • 1 teaspoons ground ginger
  • 4 boneless skinless chicken breasts
  • 1/3 cup milk
  • 2 tablespoons salted peanuts chopped
  • Spicy Peanut Sauce:
  • 1/2 cup plain yogurt
  • 1/4 cup creamy peanut butter (chunky can be used to add more peanuts)
  • 1/2 cup milk
  • 1 tablespoon soy sauce
  • 1/8 teaspoon ground red pepper (cayenne)

Preparation

Step 1

Heat oven to 425. In a 13 X 9 inch pan, melt butter in oven. In large bowl: mix Bisquick mix, curry powder, garlic powder and ginger. Place milk in separate bowl. Dip chicken into milk, then coat with Bisquick mixture. Place in pan. Bake uncovered 20 minutes: turn chicken and bake 10 minutes longer or until the juice of the chicken is clear in thickest part of chicken. Meanwhile, in 10" nonstick skillet, mix all peanut sauce ingredients. Cook over medium heat 3 to 4 minutes, stirring occasionally until mixture begins to thicken. Add cooked chicken and turn pieces over enough to give them a light coating of sauce. Serve chicken and pour remaining sauce over chicken. Sprinkle the chopped nuts on top.
