Fried Filet of Sole w/Brandy Butter

Ingredients
- Sauce:
- 1-1/2 lbs. fillet
- 1/4 tsp. salt
- 1/4 tsp. celery salt
- pepper
- 1/4 cup dry white wine
- 2 tbs. brandy
- 1/4 cup water
- 2 egg yolks beaten
- 1 cup instant disovling flour
- 2 egg whites beaten stiff
- 2 sticks unsalted butter
- 2 Tbsp. olive oil
- juice of 2 lemons
- 1 Tbsp. Worscheshire sauce
- 3 dashes hot sauce
- 1 Tbsp. capers

Step 1
Wash and thoroughly dry the sole. Cut each piece into quartes sprinkle with salt, celery salt and pepper. Pour wine, brandy , water and 1/2 tsp. salt into mixing bowl, add egg yolks mix well add flour and blend . Fold beaten egg whites into batter. Dip each piece of fillet into batter and fry until golden brown.
Lemon Butter Sauce:
In sauce pan over medium heat melt 2 sticks of unsalted butter, 2 Tbsp.olive oil. Add juice of 2 lemons, 1 Tbsp. Worchestire sauce, 3 dashes hot sauce, 1 Tbsp. capers. Cook 2-3 minutes.
Pour over fried filet.
