Ingredients

  • 1 cup boiling water
  • 1 cup dried apricots chopped
  • 1 cup dried cranberries *
  • 3 TBS unsalted butter
  • 1/2 cup cream cheese
  • 1 cup sugar
  • 2 eggs
  • 2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp grated orange peel
  • MAY SUBSTITUTE RAISINS OR CHOPPED DATES

Preparation

Step 1

Preheat oven to 350....grease 9x3 loaf pan

Pour boiling water over apricot pieces...cool

Combine flour, baking powder, soda, and salt.

Cream butter, cream cheese, and sugar til light and fluffy, add eggs one at a time. Stir in apricots, water, orange peel, and cranberries. Add flour mixture and stir til moistened.

Pour into prepared loaf pan, and bake for 50-60 minutes or til it tests done. Let stand for 10-15 minutes, and remove from pan.
