Hearty Beef & Macaroni Dinner

Ingredients

  • 3/4 lb lean ground beef round
  • 2 cups chopped onions
  • 1/2 cup chopped bell pepper
  • 1 914.5 oz) can diced tomatoes, undrained
  • 4 oz (1 cup) uncooked elbow macaroni
  • 1 cup hot water
  • 1/2 cup ketchup
  • 1/2 tsp salt
  • 1/2 tsp dried Italian seasoning
  • NOTE: I like to add frozen or a can of corn in the final steps.

Preparation

Step 1

Spray nonstick dutch oven with nonstick cooking spray. Heat over medium high heat until hot. Add ground beef round, onions and bell pepper; cook 4 to 6 minutes or until beef is browned and onions are tender. Remove beef mixture from skillet; drain on paper towels. In same skillet, add can of diced tomatoes, water, ketchup, salt, Italian seasoning, drained meat and pasta. Bring to a boil and simmer for 15 - 20 minutes or until pasta is tender.
