Ingredients
- 4 cups apples, peeled, cored and chopped
- 4 large eggs, beaten
- 1 cup vegetable oil
- 2 teaspoons vanilla extract
- 2 teaspoons baking soda
- 2 teaspoons salt
- 2 teaspoons ground cinnamon
- 3 cups all purpose flour
- 2 cups white sugar

Step 1
Preheat oven to 350F. Lightly grease two loaf pans.
In a large bowl, beat the eggs until fluffy. Add the oil and beat until combined. Add the vanilla extract, baking soda, salt and cinnamon. Beat thoroughly. Add the flour and sugar, mixing on low speed. Add the apple chunks. The batter will be very thick. Divide the mixture into the two pans.
Bake for approximately one hour. The loaf should feel firm when touched in the middle. Remove from the oven and place on cooling rack. Let cool for 5 minutes before removing from pans.
