Ingredients
- 1/2 lb bulk light turkey and pork sausage
- 2 medium onions, chopped (1 cup)
- 2 lb. (about 12 medium) red potatoes, unpeeled, very thinly sliced
- 1 cup water
- 1/2 tsp salt
- 1/2 tsp paprika
- 1/4 tsp dried thyme leaves
- 1/8 tsp pepper

Heat nonstick dutch oven over medium high heat until hot. Add sausage; cook 4 to 5 minutes or until no longer pink. Remove sausage from dutch oven; drain on paper towels. Set aside. Wipe dutch oven dry with paper towels; spray with nonstick cooking spray. Add onions; cook over medium heat for about 5 minutes. Add cooked sausage and all remaining ingredients; mix gently but thoroughly. Bring to a boil. Reduce heat to medium low; cover tightly and cook 8 to 10 minutes or just until potatoes are tender; stirring occasionally. Remove dutch oven from heat; stir mixture gently. Let stand 10 minutes, covered, to allow flavors to blend and light sauce to form.
