Ingredients

  • 4 med ripe tomatoes, chopped in lg pieces or wedges
  • 2 Persian or English cucumbers, peeled & chopped into lg pieces
  • 1 small red onion, thinly sliced
  • Black Greek olives pitted & sliced or Kalamata olives whole, non pitted
  • Green pepper, thinly sliced
  • Lg chunk Greek Feta cheese
  • Capers (optional)
  • Dressing
  • 1 c EVOO
  • Zest of 1 lemon
  • Juice of two lemons
  • 2 T red wine vinegar
  • 1 t Dijon mustard
  • 1 t honey
  • 2 garlic cloves, minced
  • 2 t dried oregano
  • 1 t dried basil
  • 1/2 t sea salt
  • 1/2 t ground black pepper

Preparation

Step 1

In shallow bowl or serving platter combine tomatoes, cucumber, onion, green pepper & olives. Add chunk of feta on top. Sprinkle with capers if desired. Add dressing when serving.

Dressing: Add all ingredients to a jar. Cover & shake for about a minute.
