Ingredients
- 4 med ripe tomatoes, chopped in lg pieces or wedges
- 2 Persian or English cucumbers, peeled & chopped into lg pieces
- 1 small red onion, thinly sliced
- Black Greek olives pitted & sliced or Kalamata olives whole, non pitted
- Green pepper, thinly sliced
- Lg chunk Greek Feta cheese
- Capers (optional)
- Dressing
- 1 c EVOO
- Zest of 1 lemon
- Juice of two lemons
- 2 T red wine vinegar
- 1 t Dijon mustard
- 1 t honey
- 2 garlic cloves, minced
- 2 t dried oregano
- 1 t dried basil
- 1/2 t sea salt
- 1/2 t ground black pepper

Preparation
Step 1
In shallow bowl or serving platter combine tomatoes, cucumber, onion, green pepper & olives. Add chunk of feta on top. Sprinkle with capers if desired. Add dressing when serving.
Dressing: Add all ingredients to a jar. Cover & shake for about a minute.
