Ingredients
- 4 eggs
- 1 1/4 cups vegetable oil
- 1 cups white sugar
- 1 cup brown sugar
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3 teaspoons ground cinnamon
- 1/2 teaspoon ground cloves
- 3 cups grated carrots
- 1 cup walnuts (or) pecans, chopped
Preparation
Step 1
In large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla. Mix in flour, baking soda, baking powder, salt, cinnamon and cloves. Stir in carrots. Fold in nuts.
Pour into prepared pan. Bake in 325 degree; preheated oven for 40 to 50 minutes, or until toothpick inserted into center of cake comes out clean. Let cool in pan for 10 minutes, then turn out onto wire rack and cool completely.
