Ingredients
- 2 T oil
- 1/2 cup diced shallots
- 8 oz. portobello diced
- 1 t oregano
- 1 t thyme
- 1 t dried dill
- 1/2 red crushed red pepper salt
- 8 oz. feta cheese
- 4 oz. ricotta
- 8 8 inch flour tortillas
- canola oil for frying
- fresh mint & date dipping sauce

Step 1
1. heat oil in large skillet, add shallows & mushrooms saute for 2 minutes. Add oregano, thyme, dill & red pepper & stir for 3 more minutes. Add a sprinkle of salt and saute for a few minutes until mushrooms are brown. In a large bowl combine cheeses with mushrooms mixing well to form a paste. Spoon 2 heaping t across tortilla leave inch border roll don't press to hard. close with toothpick.
2. Fill skillet with i inch canola oil over medium-high heat. Fry tortillas on each side to golden brown keep turning for 1 to 2 minutes.
Mint & date sauce-2 cups fresh mint leaves/3 dry dates pitted/5 serrano chilies stem removed
2T fresh lemon juice. Put all in blender & puree. may need to add water also good over pork.
