Yogurt Raisin Cake

Moist and Luscious. A bits of sweetness from raisins and a bits of sour from yogurt.

Ingredients
- 4 Eggs
- 1/3 cup sugar
- 1 can (6 oz.) vanilla yogurt
- 8 tsp. cooking oil
- 1/3 cup cake flour, sifted
- 1 cup raisins
Preparation
Step 1
Preheat oven to 350 degrees F. Line a parchment paper in a regular loaf pan, lightly spray with no-stick cooking oil.
In a medium mixing bowl, beat eggs and sugar with an electric mixer for about 5 minutes until batter turns light creamy yellow color. Then, add yogurt, flour and cooking oil, blend well.
Pour the batter to the prepared pan, sprinkle the raisins over the top. Raisins will sink to the bottom.
Bake 45-55 minutes or until a toothpick comes out clean from the center of the cake.
