Cranberry, Coconut and Almond Oatmeal

Ingredients

  • 1/2 cup regular oats
  • 1 cup vanilla almond milk
  • 1 teaspoon cinnamon
  • 1 tablespoon almond meal (raw almonds ground up in food processor) or chopped almonds
  • 1/4 cup cranberries
  • 1/4 cup unsweetened shredded coconut
  • 1 tablespoon pure maple syrup
  • 2 teaspoons chia or flax seed (optional)
  • pinch of salt

Preparation

Step 1

Combine all ingredients in microwavable bowl. Microwave on high for 1 1/2 – 2 minutes, until liquid is absorbed. Stir and serve.
